Spanish | Catalan Panellets

By October 30, everyone in Barcelona and Catalonia will start baking panellets

You usually eat these cookies together with roasted chestnuts and moniatos (sweet potatoes) during the Castanyada festival and All Saints’ Day.

Children also learn at school how to prepare panellets. So it is a very simple dish but very tasty!

Ingredients:

For the base:

  • 500 g ground almonds
  • 500 g fine sugar
  • 1 potato (150 g)
  • 2 eggs

For the toppings:

  • pine nuts (circa 250 g)
  • dark chocolate sprinkles (circa 250 g)
  • coconut flakes (circa 250 g)
    • Tip: You can choose anything in terms of toppings, but my favorites are pine nuts, chocolate sprinkles and coconut

Preparation Panellets

  1. Boil the potato with the skin. Drain the water and quickly remove the potato skin (be careful as it can be hot). Mash the potato in a bowl while it is still warm. Slowly add the fine sugar to the bowl while stirring it into the potato. Keep stirring until the sugar has really melted.
  2. Slowly add the ground almonds to the mix. Mix everything together with a fork or your hands.
  3. Let the mixture sit for a while while you prepare the countertop for the next steps.
    • Open the eggs and stir them in a bowl. Place all the toppings on small plates and preheat the oven to 250 degrees. Set your oven to the grill setting, or top heat only.
  4. Form small balls from the mixture and add the toppings:
    • For the pine nuts: place the balls in the scrambled egg and then dip them one by one in the pine nuts. Apply another layer of egg over it with a brush. Once you have prepared some balls with the pine nuts, place them in the preheated oven for about 10 minutes so that they brown a bit.
    • For the coconut: place the balls in the scrambled egg and pour the coconut grater over them. Place them in the oven until they change color slightly.
    • For the chocolate sprinkles: place the balls in the scrambled egg and spread the chocolate sprinkles over them. Place them in the oven last for about 10 minutes and keep an eye on them so that the chocolate does not melt.
  5. After the panellets come out of the oven, let them cool before eating them.

They will keep for 3-4 days in an airtight container!
